Brewing on Island Time

Hawaii Standard Time (HST) Brewing has grown from the fertile grounds of Kauai, just like so much of the beautiful foliage. After meeting nearly a decade ago amongst a group of teachers, co-owners Skyler Lassman and Paul Schmitz connected on a shared passion for beer and started brewing together. With support from the Kauai Homebrew Club, the duo have built up an extensive repertoire of styles, including beers, ciders, seltzers, and non-alcoholic fizzi teas.

HST Brewing will open in 2026, tucked away on historic Kress Street in Downtown Lihue. They are excited to be a part of the community that the neighborhood has created. From the murals lining the street, to monthly markets, brewers fests, and late night saimin, Kress Street has an energy unique to Kauai. We hope you enjoy the beer and come back often to try the next wave of ideas these two come up with!
